We were fortunate enough to stop by and chat with Sky Conley and Brett Mason of Hourglass Brewing in Longwood the other day. They were nice enough to share a couple of their beers and talk to us about the opening of their new brewery in Central Florida. OBG: There are a lot of homebrewers and beer lovers out there that would love to open up a brewery. How were you guys able to pull it off?
HOURGLASS: Yea. That was us... A lot of nights of drinking (laughs)! It is an insane amount of homework, daily homework. There are so many federal statutes and if you don't know one of them you could be completely screwed. And then the money. Obviously thats a big factor. We put up a lot of the money to get the equipment. We also have Lance Butterfield who is our other partner/investor who has put up the lionshare of the amount and also has put in a lot of work getting the brewery and tasting room ready. We've had to pay for rent, electricity, and internet for a year now. Also 6,000 bottles and 90 kegs. All that adds up. That's the biggest hurdle. OBG: What can local beer drinkers expect from Hourglass Brewing? HOURGLASS: Artisan, gourmet style beers. We go through a lot of flavors. The beer we're kegging right now has coffee, chocolate, and lactose sugar. It's packed with flavor and has high alcohol. But we also have this Milk Blonde Ale thats like 3% ABV but still has a lot of flavor. People can always find something weird here. We have a sour cherry wheat ,butternut squash and Brazil nut ale, a beer made with rose petals, and we also plan to do sours in about a year. We also have some IPA's and a few classic styles. We want to have something new everytime people pull up! OBG: Do you have anything special planned for your tasting room? HOURGLASS: We plan to have a great selection of World Class beers available other than the ones we make . Beers that have like a perfect score and beers that we dream we'll be able to make. We also consider places like Cigar City to make World class beers so we'll have some local stuff. We're good friends with the 7venth Sun guys so some of their stuff will end up here too. We have to support our buddies. We're big fans of sour beers so we plan to devote one our our draft lines to sours and we'll have one line for a guest tap. OBG: Could you tell us a little more about the "sours" you plan on making in a year? HOURGLASS: We have a time theme for all of our beer names. So our plan is to have sour versions of our beers one year after we first serve them. Kind of like they went through a time warp and became sour. The best beers for souring tend to have wheat or oats in them. High protein for the bacteria. So those will be the ones we sour. We've experimented with this a little and some of those beers have just surprised the hell out of us. OBG: I know you are planning to open soon. Can you tell us about your opening day? HOURGLASS: We're planning a big outdoor festival to celebrate our opening. Outdoor seating, live music, food trucks, things like that. We're working on getting permits for all that stuff now and hopefully we'll be all set real soon. We just don't want to run out of beer on the first day! OBG: Good stuff guys and good luck with everything. Be sure to let us know when you have an official opening day date so we can let everyone know! HOURGLASS: Thanks! We will. * Hourglass Brewing is located near the corner of 434 and South Ronald Regan Parkway in Longwood, Fl.
